Merchandiser Bottle Fridge - Compressor Stopped Running

After a coolant charge last summer, my Beverage Air MT-12 (coca cola) double door merch fridge had been running well. Ran often, of course, but to be expected. The compressor would run around 30 minutes give or take followed by 30 off, and repeat this all day, to maintain an internal temp of 35 - 41 degrees (lots of glass in this thing, front and back).

Yesterday, that stopped happening and the unit's compressor no longer kicks on regardless of where I set the temperature dial. Evaporator fans at the top running fine if switched on as well as the light. Internal temp is warmer than room temp (80 degrees, room is around 70).

I do have a spare thermostat to try (changed this out last year before I knew coolant was the issue), wondering if the first step might be able to change that back to the other thermostat?

I guess it's also possible the compressor finally just decided to call it a day? This unit has to be at least 10-15 years old likely much older.

Not a lot of experience in repair but not afraid to take stuff apart. I did try unplugging it for an hour and plugging it back in to see if it was just overheated but no luck. It's running, but the compressor is definitely not coming back on (having owned this for 6 years now I know the difference of course, much louder).

Any thoughts? My bigger worry now is the beer that got warm in there before I caught it, say a prayer for that while you help me troubleshoot? :)
