Servicing an evap leak on a supermarket roof rack system

We hadto burn out a leaky evap coil from a LT supermarket case . The rack is on the roof and The valve at the header wouldnt fully close its old . We got it down to 1 psi but still burned gas when we went to braze .

What is the right way to do this? Recovery and purge with nitrogen on the roof first ? The valve wouldnt fully close so we could have spent hours slowly recovering all the gas in the whole rack before we got all of it out of the line.

Should we have shutdown the whole rack and make the store empty all the cases the rack serves in the middle of the day? Change out the valve too? Im new and was told alot of commercial companies dont even do recovery on this type of repair or at all alot cuz its thousands of pounds of refrigerant with 20+ different types and the logistics of recovering all of that is ridiculous, or so im told?

Im Interested to hear any opinions. Whats the safe way? Whats the reasonable way? what the proper way? ideally without leaking refrigerant and phosgene into the store. dms are open.

I feel like we should have p100 or some kind of respirator and fume extracting going on at least ? Im 2 months into racks so what do I know lol. any links would be appreciated
