Help troubleshooting ice maker...advanced!
1993 GE Profile fridge with add on IM-2 ice maker. Girlfriend got it from her dad and must’ve smashed the water valve when he threw it on his pickup truck...that’s where the story starts.

I used a device called an Add a Tee to tap into the cold water line underneath the sink. Seems to flow pretty well, unsure about true ‘pressure’ but it’s coming from city municipal water line.

Hooked everything up and turned water on, water valve leaked like crazy (upon closer inspection, noticed it was cracked broken, see opening line in story

Replaced water valve with a generic one off Amazon and made it work; using a union to connect two different size tubings together and get the water into the freezer, no leaks on the outside! Wohoo!

It made ice late in the night and I went to bed when it spit out a few cubes and refilled appropriately...figured I was out of the woods

Woke up in morning to see a sheet of ice in ice cube tray, with perfectly fine fresh cubes on top of it...what? So, it leaked overnight, froze, then made cubes fine again. Emptied tray completely and started over. Maybe air in line or something goofy didn’t trigger a sensor or something.

Checked again hours later, same issue. Thin sheet of ice in tray, with fresh cubes on top
What am I missing? The next thing I’m trying now is to turn the set screw in a bit on icemaker to reduce water level. Might be counterintuitive, I guess if that doesn’t work I’ll try turning it out so more water goes in and triggers some sensor? I don’t know if when power goes to the water valve solenoid it’s just timed or how it knows to stop the water.
Any tips or advice is greatly appreciated, this one is a head scratcher.
